Who doesn’t love a thick layer of icing on a cake, right? Well apparently, there is a new trend of so called ‘naked’ cakes that are all the rage right now. I was asked to do this wedding cake and to leave it rustic with just a crumb coating. I was skeptical at first about doing this because I was concerned that the cake would become dry. The trick is to put enough icing to keep the moisture in while allowing enough of the cake to show to give the desired look. I must say I was pleased with the end result and so was the customer.
I’m looking forward to designing more of this style cake. I’ve got so many ideas swirling in my head and can’t wait to put them in action.
